  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces cheddar cheese (shredded; divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine grated zucchini, chopped onion, half of the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix well.
  3. Fold in the corn muffin mix until just combined.
  4. Transfer to a greased baking dish and spread evenly.
  5. Top with remaining cheddar cheese.
  6. Bake for about 50 minutes until golden brown on top and set in the middle.
