  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing garlic, and grating ginger.
  2. In a skillet over medium heat, melt coconut oil and sauté the onion until translucent. Add garlic and ginger; cook for an additional minute.
  3. Stir in curry powder, turmeric, cumin, and cayenne pepper; cook for about 30 seconds.
  4. Transfer beef cubes to the slow cooker. Add the sautéed mixture along with diced tomatoes, coconut milk, tomato paste, salt, and pepper. Stir well.
  5. Cover and slow cook on low heat for 6-8 hours or high heat for 4-5 hours until beef is tender.
  6. Serve hot over cooked rice with crispy fries on the side.
