Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp coconut oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) full-fat coconut milk
- 1 tbsp tomato paste
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the onion, mincing garlic, and grating ginger.
- In a skillet over medium heat, melt coconut oil and sauté the onion until translucent. Add garlic and ginger; cook for an additional minute.
- Stir in curry powder, turmeric, cumin, and cayenne pepper; cook for about 30 seconds.
- Transfer beef cubes to the slow cooker. Add the sautéed mixture along with diced tomatoes, coconut milk, tomato paste, salt, and pepper. Stir well.
- Cover and slow cook on low heat for 6-8 hours or high heat for 4-5 hours until beef is tender.
- Serve hot over cooked rice with crispy fries on the side.
