  • 1 (14 oz) can full-fat coconut milk
  • 1 (14 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté diced onion until soft, then add minced garlic and grated ginger; cook until fragrant.
  2. Increase heat to medium-high and brown the beef cubes on all sides.
  3. Stir in the curry powder, cumin, turmeric, cinnamon, and chili flakes; coat the beef well.
  4. Pour in coconut milk, crushed tomatoes, tomato paste, brown sugar, lime juice, salt, and pepper; mix thoroughly.
  5. Cover and reduce heat to low; let simmer for at least 2 hours until the beef is tender.
  6. Taste and adjust seasoning before serving hot over rice or on its own.
