- 2 lbs beef chuck or stew meat, cut into bite-sized pieces
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp chili flakes (optional)
- 1 can coconut milk
- Broth or water to cover
Instructions
- Prepare ingredients by chopping onions, mincing garlic, grating ginger, and cutting beef into bite-sized pieces.
- Heat vegetable oil in a large pot over medium-high heat and sear beef until browned on all sides. Remove and set aside.
- In the same pot, sauté onions until translucent; add garlic and ginger and cook until fragrant.
- Stir in spices and toast briefly before returning the seared beef to the pot.
- Add enough broth or water to cover the ingredients and bring to a gentle simmer.
- Cover tightly and reduce heat to low; simmer for at least 1.5 hours until beef is tender.
- Stir in coconut milk and let simmer uncovered for an additional 15-20 minutes until thickened.
