Instructions
- Preheat oven to 350°F and line two baking sheets with parchment paper.
- In a bowl, mix together flour, baking powder, baking soda, and salt.
- In a stand mixer, cream together softened butter and sugar until light and fluffy.
- Add egg and almond extract; mix until combined.
- Gradually incorporate dry ingredients until just combined.
- Scoop dough onto prepared baking sheets, spacing them about 4-5 inches apart.
- Bake for 8-11 minutes until edges are set but centers appear soft; cool on wire rack.
- Prepare frosting by beating together softened butter, almond extract, salt, and powdered sugar. Add more sugar as needed for consistency.
- Frost cooled cookies and decorate as desired.
