Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 garlic clove, minced
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (8.5 oz) box corn muffin mix
- 1 large egg
- 1/3 cup milk
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef. Add diced onion and minced garlic; sauté until fragrant.
- Stir in corn, black beans, and diced tomatoes along with spices. Simmer for 5-7 minutes.
- In a separate bowl, mix the corn muffin mix with egg and milk until just combined.
- Pour the beef mixture into a greased baking dish and spread the cornbread batter on top.
- Bake for 25-30 minutes until golden brown.
- Remove from oven and sprinkle with shredded cheddar cheese; return to bake for an additional 3-5 minutes until melted.
