  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Add diced onion and minced garlic; sauté until fragrant.
  3. Stir in corn, black beans, and diced tomatoes along with spices. Simmer for 5-7 minutes.
  4. In a separate bowl, mix the corn muffin mix with egg and milk until just combined.
