  • 1/8 teaspoon ground cardamom
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium ripe pears (peeled and diced (about 1 1/2 cups))

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin.
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Beat in eggs one at a time, followed by vanilla.
  4. Gradually add the dry mixture to the wet mixture while alternating with milk; mix until just combined.
  5. Gently fold in diced pears using a rubber spatula.
  6. Divide batter into muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes until a toothpick comes out clean. Cool before serving.
