Ingredients

  • 120g ground beef
  • 1 cup cherry tomatoes (or 1 roma tomato), chopped
  • 2 tbsp grated manchego cheese
  • 2 eggs
  • 1 tsp olive oil (for frying)
  • Avocado, sliced
  • 1 tsp chili oil
  • 1 tsp everything bagel seasoning
  • 1 tsp Tajn seasoning (or chili-lime spice)
  • 1 tsp sriracha

Instructions

  1. In a non-stick frying pan over medium heat, brown the ground beef.
  2. Add chopped tomatoes and sauté until softened.
  3. Stir in the grated manchego cheese, season with salt and pepper to taste, then remove from heat.
  4. In another non-stick pan, heat olive oil and crack in the eggs.
  5. Cook sunny side up or over-easy as preferred.
  6. Drizzle with chili oil and sprinkle everything bagel seasoning on top.
  7. To assemble, layer the beef mixture at the bottom of a serving bowl, top with sliced avocado seasoned with Tajn and drizzled with sriracha.
  8. Place the fried eggs on top and serve immediately.
