Ingredients
- 120g ground beef
- 1 cup cherry tomatoes (or 1 roma tomato), chopped
- 2 tbsp grated manchego cheese
- 2 eggs
- 1 tsp olive oil (for frying)
- Avocado, sliced
- 1 tsp chili oil
- 1 tsp everything bagel seasoning
- 1 tsp Tajn seasoning (or chili-lime spice)
- 1 tsp sriracha
Instructions
- In a non-stick frying pan over medium heat, brown the ground beef.
- Add chopped tomatoes and sauté until softened.
- Stir in the grated manchego cheese, season with salt and pepper to taste, then remove from heat.
- In another non-stick pan, heat olive oil and crack in the eggs.
- Cook sunny side up or over-easy as preferred.
- Drizzle with chili oil and sprinkle everything bagel seasoning on top.
- To assemble, layer the beef mixture at the bottom of a serving bowl, top with sliced avocado seasoned with Tajn and drizzled with sriracha.
- Place the fried eggs on top and serve immediately.
