Ingredients
- 4 cups fresh spinach, chopped
- 2 cups rotini pasta, uncooked
- 1 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/4 cup extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook rotini pasta in salted boiling water until al dente. Drain and cool completely.
- Rinse fresh spinach under cold water and chop.
- In a large mixing bowl, combine cooled pasta, chopped spinach, feta cheese, and cranberries; toss gently.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle dressing over the salad while tossing to coat evenly. Taste and adjust seasoning if necessary.
