Ingredients
- 5 oz spinach (or baby kale)
- 1 lb strawberries (sliced)
- 1/2 cup feta cheese (crumbled)
- 1/4 cup candied pecans
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- salt and pepper to taste
Instructions
- In a large mixing bowl, combine the spinach and sliced strawberries. Add crumbled feta on top.
- In a separate bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well mixed.
- Drizzle the dressing over the salad ingredients and toss gently to coat evenly.
- Finally, sprinkle candied pecans on top before serving. Enjoy fresh!
