Ingredients
- 1 box chocolate cake mix (13.25 oz)
- ⅓ cup neutral oil (vegetable, avocado, canola)
- 1 cup milk or water
- 4 large eggs
- ¼ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1½ tbsp cocoa powder
- ½ tsp vanilla extract
- 12 oz dark cocoa candy melts
- White nonpareils or sprinkles for decoration
Instructions
- Preheat oven to 325°F (162°C).
- Combine cake mix, oil, milk, eggs, and softened butter in a bowl; mix well.
- Pour batter into a greased baking pan and bake according to box instructions until a toothpick comes out clean.
- Once baked, crumble the warm cake into a mixing bowl.
- Prepare the buttercream by mixing powdered sugar and cocoa powder with a splash of milk until smooth; combine with crumbled cake.
- Roll mixture into 1¼-inch balls; chill in the freezer for 15 minutes.
- Melt candy melts as per package instructions; dip lollipop sticks into melted candy before inserting them into each ball.
- Coat the chilled cake pops in melted candy melts and decorate immediately with sprinkles.
- Place the finished pops upright in a styrofoam block to dry completely.
