- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- 1 Tbsp lemon zest
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 2 Tbsp lemon juice
- ½ cup buttermilk (or substitute)
- ¼ cup lemon juice for syrup
- 3 Tbsp powdered sugar for syrup
- 1 cup powdered sugar for icing
- 1 ½ Tbsp lemon juice for icing
- 1 Tbsp milk for icing
Instructions
- Preheat oven to 350°F (177°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, lemon zest, and salt.
- In a mixer, cream butter and sugar until fluffy. Add eggs one at a time along with vanilla extract and lemon juice.
- Gradually mix in dry ingredients alternating with buttermilk until combined.
- Pour batter into the prepared pan and bake for about 45–55 minutes until golden brown.
- Cool in the pan for about 15 minutes before applying the syrup made from lemon juice and powdered sugar.
- Once cooled completely, top with icing made from powdered sugar, lemon juice, and milk.
