  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 Tbsp lemon zest
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 Tbsp lemon juice
  • ½ cup buttermilk (or substitute)
  • ¼ cup lemon juice for syrup
  • 3 Tbsp powdered sugar for syrup
  • 1 cup powdered sugar for icing
  • 1 ½ Tbsp lemon juice for icing
  • 1 Tbsp milk for icing

Instructions

  1. Preheat oven to 350°F (177°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, lemon zest, and salt.
  3. In a mixer, cream butter and sugar until fluffy. Add eggs one at a time along with vanilla extract and lemon juice.
  4. Gradually mix in dry ingredients alternating with buttermilk until combined.
  5. Pour batter into the prepared pan and bake for about 45–55 minutes until golden brown.
  6. Cool in the pan for about 15 minutes before applying the syrup made from lemon juice and powdered sugar.
  7. Once cooled completely, top with icing made from powdered sugar, lemon juice, and milk.
