  • 2 cups uncooked rice
  • 3 large chicken breasts
  • 2 small heads of broccoli
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder + 2 tbsp water (slurry)
  • ½ cup mayonnaise
  • 23 tbsp water (for mayo)
  • sesame seeds for garnish

Instructions

  1. Rinse rice under cold water and cook with 4 cups of water in a saucepan until tender (18-20 minutes).
  2. Season chicken pieces with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  3. Cook seasoned chicken in an air fryer at 375°F for 15-20 minutes.
  4. Prepare sticky sauce by mixing soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, ground ginger, and arrowroot slurry.
  5. Combine cooked chicken with sticky sauce until well-coated.
  6. Mix mayonnaise with sriracha and adjust consistency using water as needed.
  7. Serve by layering rice in bowls topped with chicken mixture, broccoli, and drizzled spicy mayo.
