Ingredients
- 1 medium sweet potato
- 150g lean ground beef
- 1 avocado
- 1 cup cottage cheese
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp honey
- Salt and pepper to taste
Instructions
- Preheat oven to 200C (400F). Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
- In a skillet over medium heat, cook the lean ground beef until browned. Season with smoked paprika, garlic powder, salt, and pepper to taste.
- In a mixing bowl, layer the roasted sweet potatoes first, followed by cooked beef and sliced avocado. Top with cottage cheese.
- Drizzle honey over the avocado and cottage cheese for added sweetness.
