- 1 cup buttermilk
Instructions
- Preheat your oven to 400°F and lightly butter an 8-inch glass baking dish.
- In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, combine pureed sweet potatoes, eggs, melted butter, and buttermilk until smooth.
- Gradually mix the dry ingredients into the wet mixture just until combined.
- Pour into the prepared dish and bake for about 40 minutes or until golden brown and set in the center.
- Let cool slightly before slicing.
