Ingredients
- 1/2 lb lean ground beef
- 1 medium sweet potato, peeled and diced
- 1 tsp olive oil
- Salt, pepper, paprika, garlic powder (to taste)
- 1/2 avocado, sliced
- 1/2 cup cottage cheese
- 1/2 tsp hot honey or chili honey
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until golden and soft.
- In a skillet over medium heat, cook ground beef until browned and crispy; season with salt and pepper.
- In a bowl, layer roasted sweet potatoes as the base, followed by cooked ground beef and sliced avocado. Top with cottage cheese and drizzle with hot honey.
