  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. In a large pot, bring water or chicken broth to a boil. Add the rice, cover, reduce heat to low, and simmer for about 18 minutes until tender.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned. Stir in taco seasoning and continue cooking for an additional 5 minutes.
  3. Fluff the cooked rice with a fork. In serving bowls, layer the rice first followed by the meat mixture.
  4. Top each bowl with black beans, corn, diced tomatoes, shredded lettuce, cheddar cheese, and drizzle with salsa.
