Ingredients
- 1 cup uncooked white rice
- 2 cups water or chicken broth
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup salsa
- 2 tablespoons olive oil
- to taste salt and pepper
Instructions
- In a large pot, bring water or chicken broth to a boil. Add the rice, cover, reduce heat to low, and simmer for about 18 minutes until tender.
- While the rice cooks, heat olive oil in a skillet over medium heat. Add ground beef or turkey and cook until browned. Stir in taco seasoning and continue cooking for an additional 5 minutes.
- Fluff the cooked rice with a fork. In serving bowls, layer the rice first followed by the meat mixture.
- Top each bowl with black beans, corn, diced tomatoes, shredded lettuce, cheddar cheese, and drizzle with salsa.
