- 3 cups old-fashioned whole oats
- 1 teaspoon baking powder
- 1 and 1/2 teaspoons cinnamon powder
- 1/4 teaspoon nutmeg powder
- 1/2 teaspoon vanilla essence
- 1/4 teaspoon salt
- 1 generous cup chopped peeled apple
- Optional: nuts for added texture
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
- In a mixing bowl, whisk together milk, eggs, maple syrup, and applesauce until smooth.
- In another bowl, combine oats, baking powder, cinnamon, nutmeg, vanilla essence, and salt.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Fold in chopped apples and optional nuts.
- Fill each muffin cup about three-quarters full with the batter.
- Bake for approximately 28 minutes or until golden brown and a toothpick comes out clean.
- Allow cooling for a few minutes before removing from the tin.
