- 1 1/2 cups walnuts
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 tablespoons corn syrup
- 1 tablespoon water
- 2 tablespoons butter
- 1/2 teaspoon pure vanilla extract
Instructions
- Line a cookie sheet with parchment paper or a silpat and set aside.
- In a medium-small saucepan, place the walnuts, both sugars, corn syrup, and water. Stir gently until combined. Add the butter.
- Attach a candy thermometer to the saucepan and heat over medium heat. Monitor closely and dissolve any sugar crystals on the edges with a wet pastry brush.
- Cook until the mixture reaches 295°F (145°C). Remove from heat and stir in the vanilla until well combined.
- Quickly spread the mixture onto the prepared baking sheet using two forks to separate any clumps. Allow cooling completely before serving.
