  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons corn syrup
  • 1 tablespoon water
  • 2 tablespoons butter
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Line a cookie sheet with parchment paper or a silpat and set aside.
  2. In a medium-small saucepan, place the walnuts, both sugars, corn syrup, and water. Stir gently until combined. Add the butter.
  3. Attach a candy thermometer to the saucepan and heat over medium heat. Monitor closely and dissolve any sugar crystals on the edges with a wet pastry brush.
  4. Cook until the mixture reaches 295°F (145°C). Remove from heat and stir in the vanilla until well combined.
  5. Quickly spread the mixture onto the prepared baking sheet using two forks to separate any clumps. Allow cooling completely before serving.
