- 1/2 English cucumber, quartered lengthwise and sliced
- 3 cups cherry tomatoes, halved
- 8 oz fresh mozzarella pearls
- 1 large avocado, diced
- 1/3 cup fresh basil, chopped
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 garlic clove, minced or pressed
- 1/2 tsp fine sea salt (plus more to taste)
- 1/4 tsp freshly cracked black pepper
Instructions
- In a large salad bowl, combine sliced cucumber, halved cherry tomatoes, mozzarella pearls, diced avocado, and chopped basil.
- In a separate bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper until well mixed.
- Drizzle the dressing over the salad mixture just before serving and toss gently to combine.
