  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup quick-cooking oatmeal
  • 6 ounces butterscotch chips
  • 1 cup confectioners' sugar
  • 1/4 cup creamy peanut butter (for glaze)
  • 4 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy using an electric mixer.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  5. Fold in the oatmeal and half of the butterscotch chips until evenly distributed.
  6. Spread the batter into the prepared pan and sprinkle with the remaining butterscotch chips. Bake for 20-25 minutes or until lightly browned around the edges.
  7. Prepare the glaze by combining confectioners' sugar, peanut butter, and milk until smooth. Pour over warm bars after baking.
  8. Allow to cool completely before cutting into squares.
