Ingredients
- 1/2 cup butter (room temperature)
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup quick-cooking oatmeal
- 6 ounces butterscotch chips
- 1 cup confectioners' sugar
- 1/4 cup creamy peanut butter (for glaze)
- 4 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy using an electric mixer.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Fold in the oatmeal and half of the butterscotch chips until evenly distributed.
- Spread the batter into the prepared pan and sprinkle with the remaining butterscotch chips. Bake for 20-25 minutes or until lightly browned around the edges.
- Prepare the glaze by combining confectioners' sugar, peanut butter, and milk until smooth. Pour over warm bars after baking.
- Allow to cool completely before cutting into squares.
