- 1/2 cup salted butter
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg white
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 20 caramels (unwrapped)
- 1 tbsp milk
- 2 cups milk chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until fluffy.
- Add the egg white and vanilla extract; mix well.
- Gradually add flour and baking powder until a soft dough forms.
- Roll out the dough on a floured surface, then cut out circles using a round cookie cutter.
- Place the dough on an ungreased baking sheet and bake for 6-8 minutes until puffy.
- Cool on a wire rack completely.
- Microwave unwrapped caramels with milk until smooth; spoon onto cooled cookies.
- Chill in the fridge for 10-15 minutes.
- Melt chocolate chips in intervals; spread over each caramel-covered cookie and let set.
