Ingredients

  • 1/2 cup salted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 20 caramels (unwrapped)
  • 1 tbsp milk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until fluffy.
  3. Add the egg white and vanilla extract; mix well.
  4. Gradually add flour and baking powder until a soft dough forms.
  5. Roll out the dough on a floured surface, then cut out circles using a round cookie cutter.
  6. Place the dough on an ungreased baking sheet and bake for 6-8 minutes until puffy.
  7. Cool on a wire rack completely.
  8. Microwave unwrapped caramels with milk until smooth; spoon onto cooled cookies.
  9. Chill in the fridge for 10-15 minutes.
  10. Melt chocolate chips in intervals; spread over each caramel-covered cookie and let set.
