Ingredients
- 2 1/4 teaspoons active dry yeast
- 1 cup warm water
- 1 tablespoon sugar
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 3 cups fresh spinach
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup marinara sauce
- Salt and pepper to taste
- 2 tablespoons nutritional yeast (optional, for topping)
Instructions
- In a small bowl, combine active dry yeast, warm water, and sugar. Let sit for 5–10 minutes until foamy.
- In a large mixing bowl, mix all-purpose flour and salt. Add the yeast mixture and olive oil; knead until smooth (about 8–10 minutes). Cover and let rise in a warm place for 1 hour.
- Heat olive oil in a skillet over medium-low heat. Add sliced onions and cook for 15–20 minutes until caramelized. Stir in minced garlic and spinach; cook until spinach wilts. Season with salt and pepper.
- Preheat oven to 375°F (190°C). Roll out dough into a rectangle on a floured surface. Spread marinara sauce evenly over the dough, then top with the onion-spinach mixture.
- Roll the dough tightly into a log and cut into 10–12 equal pieces. Place rolls in a greased baking dish.
- Bake for 25–30 minutes until golden brown.
