Ingredients

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper, to taste
  • 2 tablespoons garlic butter (for cooking)
  • 12 cups shredded cheddar cheese (for filling)

Instructions

  1. Squeeze moisture out of the grated zucchini using cheesecloth or a kitchen towel.
  2. In a mixing bowl, combine the drained zucchini with egg, Parmesan, cornstarch, salt, and pepper until well mixed.
  3. Heat garlic butter in a skillet over medium heat until melted.
  4. Shape half of the mixture into a patty and place it in the skillet; repeat for the second patty.
  5. Cook each patty for 3–4 minutes on each side until golden brown and crispy.
  6. Add shredded cheddar cheese between two cooked patties and cook for an additional 3 minutes until melted.
  7. Let cool slightly before slicing and serve warm.
