- 2 cups grated zucchini
- 1 large egg
- ½ cup freshly grated Parmesan cheese
- ¼ cup cornstarch
- Salt and pepper, to taste
- 2 tablespoons garlic butter (for cooking)
- 1–2 cups shredded cheddar cheese (for filling)
Instructions
- Squeeze moisture out of the grated zucchini using cheesecloth or a kitchen towel.
- In a mixing bowl, combine the drained zucchini with egg, Parmesan, cornstarch, salt, and pepper until well mixed.
- Heat garlic butter in a skillet over medium heat until melted.
- Shape half of the mixture into a patty and place it in the skillet; repeat for the second patty.
- Cook each patty for 3–4 minutes on each side until golden brown and crispy.
- Add shredded cheddar cheese between two cooked patties and cook for an additional 3 minutes until melted.
- Let cool slightly before slicing and serve warm.
