Ingredients
- 2 medium zucchini
- 1 tsp dried oregano
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1 cup marinara sauce
- Fresh basil for garnish
Instructions
- Preheat the oven to 190C (375F) and lightly grease your baking dish.
- Slice the zucchini lengthwise and lay them in a single layer in the baking dish. Sprinkle with dried oregano.
- Spread half of the ricotta over the zucchini slices and drizzle half of the marinara sauce on top.
- Repeat layering with the remaining zucchini, ricotta, and marinara.
- Top with shredded mozzarella and cover with aluminum foil. Bake for 25-30 minutes then uncover and bake for an additional 10-15 minutes until golden brown.
- Allow to cool briefly before serving, garnished with fresh basil.
