Ingredients

  • 2 medium zucchini
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease your baking dish.
  2. Slice the zucchini lengthwise and lay them in a single layer in the baking dish. Sprinkle with dried oregano.
  3. Spread half of the ricotta over the zucchini slices and drizzle half of the marinara sauce on top.
  4. Repeat layering with the remaining zucchini, ricotta, and marinara.
  5. Top with shredded mozzarella and cover with aluminum foil. Bake for 25-30 minutes then uncover and bake for an additional 10-15 minutes until golden brown.
  6. Allow to cool briefly before serving, garnished with fresh basil.
