  • 1 pound Italian Beef sausage (mild or spicy)
  • 4 medium potatoes (diced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream
  • Olive oil
  • Red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian Beef sausage and cook until browned.
  2. Stir in diced onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute.
  3. Add diced potatoes and chicken broth; bring to a boil then reduce to a simmer for about 15 minutes until potatoes are tender.
  4. Stir in chopped kale and red pepper flakes (if using). Cook for an additional 5 minutes.
  5. Lower heat and mix in heavy cream, seasoning with salt and pepper to taste. Warm through for 2-3 minutes before serving.
