Ingredients
- 1 pound Italian Beef sausage (mild or spicy)
- 4 medium potatoes (diced)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 6 cups chicken broth
- 1 bunch kale (chopped)
- 1 cup heavy cream
- Olive oil
- Red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian Beef sausage and cook until browned.
- Stir in diced onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute.
- Add diced potatoes and chicken broth; bring to a boil then reduce to a simmer for about 15 minutes until potatoes are tender.
- Stir in chopped kale and red pepper flakes (if using). Cook for an additional 5 minutes.
- Lower heat and mix in heavy cream, seasoning with salt and pepper to taste. Warm through for 2-3 minutes before serving.
