Ingredients
- 2 cups cooked jasmine rice (cold)
- 1 green onion (finely chopped)
- 2.5 tbsp soy sauce
- 0.5 tbsp sesame oil
- 4 large eggs (beaten)
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a large pan or wok until hot.
- Pour beaten eggs into the pan and stir-fry until slightly set but still moist.
- Add cold jasmine rice, breaking apart any clumps, and mix well with the eggs.
- Push the mixture to one side, add more oil, and toss in green onions; combine everything.
- Pour soy sauce and sesame oil around the edges of the pan, mixing thoroughly until rice is evenly colored.
