Ingredients
- 4 boneless, skinless chicken breasts
- 1 medium Granny Smith apple, thinly sliced
- 4 oz light Brie cheese, sliced
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp creamy Dijon mustard
- 1 tsp whole grain Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried thyme
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Create pockets in the chicken breasts by slicing them horizontally without cutting all the way through.
- Stuff each pocket with apple slices and Brie.
- Season the chicken with salt, pepper, and thyme on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 1-2 minutes on each side until golden brown.
- Whisk together maple syrup and mustards in a small bowl, then brush the glaze over the tops of the chicken.
- Bake in the preheated oven for 20-25 minutes or until fully cooked through.
