  • 0.25 cup brown sugar (for topping)
  • 0.25 cup cold butter (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 0.25 teaspoon salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, sugar, and cinnamon.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. In a separate bowl, mix apple butter, brown sugar, cinnamon, and flour for the swirl.
  6. Spoon half of the muffin batter into each muffin cup; add a dollop of apple butter mixture on top and cover with remaining batter.
  7. Bake for about 22 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for about 5 minutes before transferring them to wire racks.
