Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated white sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 medium apples (peeled and diced)
- 1/3 cup brown sugar (topping)
- 1 tablespoon cinnamon (topping)
Instructions
- Preheat oven to 350°F (180°C) and grease a 9 x 4 inch loaf tin lined with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Gradually mix in half the flour mixture, then add buttermilk until combined. Fold in remaining flour gently.
- In a separate bowl, toss diced apples with brown sugar and cinnamon.
- Pour half the batter into the loaf tin; layer with half the apple mixture and swirl gently. Repeat with remaining batter and apples.
- Bake for 55-65 minutes, covering with foil after 30 minutes to prevent browning.
- Cool in the pan for 10 minutes before transferring to a cooling rack.
