  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated white sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar (topping)
  • 1 tablespoon cinnamon (topping)

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9 x 4 inch loaf tin lined with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually mix in half the flour mixture, then add buttermilk until combined. Fold in remaining flour gently.
  5. In a separate bowl, toss diced apples with brown sugar and cinnamon.
  6. Pour half the batter into the loaf tin; layer with half the apple mixture and swirl gently. Repeat with remaining batter and apples.
  7. Bake for 55-65 minutes, covering with foil after 30 minutes to prevent browning.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
