- 2 large apples (Granny Smith or Honeycrisp)
- 2 cups all-purpose flour
- 3/4 cup brown sugar
- 2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tbsp powdered sugar (for glaze)
- 1–2 tbsp milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
- Peel, core, and dice apples; toss with cinnamon and a sprinkle of sugar.
- In a bowl, whisk together flour, brown sugar, baking powder, ground cinnamon, and salt.
- In another bowl, combine eggs, milk, and melted butter; mix until smooth.
- Gradually add wet ingredients to dry mixture; stir until just combined. Gently fold in spiced apple chunks.
- Fill muffin tin with batter about three-quarters full.
- Bake for 20-25 minutes until golden brown; test with a toothpick.
- For the glaze, whisk powdered sugar with milk until smooth and drizzle over warm muffins.
