- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard setting. Grease and line a loaf tin with baking paper.
- In a mixing bowl, mash the overripe bananas until smooth. Mix in canola oil, milk, both sugars, eggs, and vanilla extract until well combined.
- Sift in flour, baking powder, and salt into the wet mixture. Stir gently until just combined; it's fine if some lumps remain.
- Pour the batter into the prepared loaf tin and bake for 45-55 minutes until golden brown. A skewer inserted should come out clean.
- Cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
