  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar

  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard setting. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas until smooth. Mix in canola oil, milk, both sugars, eggs, and vanilla extract until well combined.
  3. Sift in flour, baking powder, and salt into the wet mixture. Stir gently until just combined; it's fine if some lumps remain.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes until golden brown. A skewer inserted should come out clean.
  5. Cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
