Ingredients
- 250 g softened butter
- 250 g caster sugar
- 1 teaspoon vanilla extract
- 4 medium eggs
- 250 g self-raising flour
- 3 tablespoons milk
- Zest of 1 orange
- 200 g icing sugar
- 2 tablespoons freshly squeezed orange juice
- Zest from 1–2 oranges
Instructions
- Preheat your oven to 180℃ (160℃ for fan ovens) and line an 8×10-inch baking tin with baking paper.
- In a mixing bowl, whisk softened butter and caster sugar together until light and fluffy. Stir in vanilla extract.
- Gradually add eggs, self-raising flour, and milk while whisking until you achieve a smooth batter. Fold in the orange zest.
- Pour the batter into the lined tin and spread evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
