Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a large bowl, cream together 1 cup unsalted butter and 1 3/4 cups granulated sugar until light and fluffy. Add 3 large eggs one at a time, mixing well after each addition. Stir in 2 teaspoons pure vanilla extract and optional lemon zest.
  3. In another bowl, whisk together 2 1/2 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add to the creamed mixture alternating with 1 cup buttermilk until just combined. Fold in 1 1/2 cups fresh blackberries gently.
  4. Divide the batter evenly between prepared pans and bake for about 32 minutes or until a toothpick comes out clean. Allow cakes to cool before frosting.
  5. For the frosting, beat together 1 cup unsalted butter and reduced blackberry puree until smooth, then mix in 3 1/2 cups powdered sugar and 4 ounces cream cheese until creamy.
