  • 2/3 cup frozen wild blueberries
  • Neutral frying oil, like vegetable, canola, or avocado oil
  • 3 cups powdered sugar
  • 1/4 cup + 23 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a large bowl, mix sugar, melted butter, buttermilk, egg, sour cream, and vanilla until combined.
  3. Fold dry ingredients into wet mixture until just combined; gently mix in frozen blueberries. Cover and refrigerate for 30 minutes.
  4. Heat oil in a Dutch oven to 355°F.
  5. Prepare a wire rack over paper towels to drain excess oil.
  6. Use a scoop to drop dough into hot oil; fry until golden brown (about 3 minutes per side). Drain on the wire rack.
  7. For the glaze, whisk powdered sugar with freeze-dried blueberry powder and milk until smooth.
