- 8 tablespoons butter
- 1 large onion, finely diced
- 1 large carrot, shredded
- 3 garlic cloves, minced
- 3 cups broccoli, chopped
- 3 cups chicken broth
- 2 ½ cups half-and-half
- 3 cups sharp cheddar cheese, grated
Instructions
- In a large pot over medium heat, melt 4 tablespoons of butter. Add onions and carrots; sauté for about 7-8 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add remaining butter and flour (or cornstarch); mix well before pouring in chicken broth gradually while whisking.
- Season with mustard powder, cayenne pepper, salt, and pepper. Bring to a simmer.
- Add chopped broccoli and half-and-half; simmer for about 20 minutes until broccoli is tender.
- Gradually stir in cheese until melted and smooth. Adjust seasoning to taste.
