- 1/2 teaspoon espresso powder (to enhance the brown sugar notes)
- 1/4 cup finely chopped pecans or walnuts (for texture)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and white sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Roll dough into balls, flatten slightly, place a caramel in the center, and wrap dough around it.
- Roll each ball in a mixture of brown sugar and cinnamon before placing on the baking sheet.
- Bake for 10–12 minutes until edges are lightly golden; cool on a wire rack.
