Ingredients
- 6 day-old croissants
- 1/2 cup softened salted butter
- 1/4 cup sugar (for syrup)
- 1/2 cup sugar (for filling)
- 1 1/4 cups almond flour
- 1 large egg
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1/4 cup sliced almonds
Instructions
- Prepare the syrup by combining sugar and water in a saucepan over medium heat until dissolved. Stir in almond extract and set aside.
- In a mixing bowl, blend softened butter, sugar, almond flour, egg, almond extract, and vanilla until smooth.
- Slice each croissant open lengthwise and fill generously with the almond mixture.
- Brush the outside of each croissant with syrup and sprinkle with sliced almonds.
- Preheat oven to 375°F (190°C) and bake for about 13 minutes or until golden brown.
- Allow to cool slightly before dusting with powdered sugar.
