  • 1/2 cup softened salted butter
  • 1/4 cup sugar (for syrup)
  • 1/2 cup sugar (for filling)
  • 1 1/4 cups almond flour
  • 1 large egg
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1/4 cup sliced almonds

Instructions

  1. Prepare the syrup by combining sugar and water in a saucepan over medium heat until dissolved. Stir in almond extract and set aside.
  2. In a mixing bowl, blend softened butter, sugar, almond flour, egg, almond extract, and vanilla until smooth.
  3. Slice each croissant open lengthwise and fill generously with the almond mixture.
  4. Brush the outside of each croissant with syrup and sprinkle with sliced almonds.
