  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 3 tablespoons flour
  • 2 teaspoons Cajun seasoning
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup shredded cheddar jack cheese
  • 2 teaspoons lime juice

Instructions

  1. Season the chicken breasts with Cajun seasoning and dredge in flour until coated.
  2. Heat olive oil in a skillet over medium heat, then cook the chicken for about 6-7 minutes per side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium-low heat, then add minced garlic and sauté until fragrant. Stir in flour and cook for one minute.
  4. Gradually whisk in chicken broth and heavy cream until smooth. Add honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes to enhance flavor.
  5. Return the chicken to the skillet along with diced tomatoes and shredded cheese. Simmer on low heat until heated through.
  6. Drizzle lime juice before serving and garnish with fresh cilantro.
