- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cups heavy cream (or half and half)
- 3 tablespoons flour
- 2 teaspoons Cajun seasoning
- 3 tablespoons butter
- 3 cloves garlic (minced)
- 10 oz. Rotel diced tomatoes with green chilies
- ¾ cup shredded cheddar jack cheese
- 2 teaspoons lime juice
Instructions
- Season the chicken breasts with Cajun seasoning and dredge in flour until coated.
- Heat olive oil in a skillet over medium heat, then cook the chicken for about 6-7 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, melt butter over medium-low heat, then add minced garlic and sauté until fragrant. Stir in flour and cook for one minute.
- Gradually whisk in chicken broth and heavy cream until smooth. Add honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes to enhance flavor.
- Return the chicken to the skillet along with diced tomatoes and shredded cheese. Simmer on low heat until heated through.
- Drizzle lime juice before serving and garnish with fresh cilantro.
