  • 3 lbs red potatoes
  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1 1/3 cups mayonnaise
  • 1/3 cup sour cream
  • 1 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard

Instructions

  1. Boil the red potatoes in salted water for about 12–15 minutes until fork-tender. Drain and let cool.
  2. In a mixing bowl, whisk together paprika, cayenne pepper, garlic powder, mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper.
  3. Once cooled, combine the potatoes with chopped eggs, celery, and green onions in a large bowl. Gently toss with two-thirds of the dressing until evenly coated.
  4. Chill for at least 30 minutes before serving; mix in remaining dressing just before serving.
