Ingredients
- 3 lbs red potatoes
- 3–4 celery stalks
- 6 hard-boiled eggs
- 2 green onions
- 1½ tsp paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1 1/3 cups mayonnaise
- 1/3 cup sour cream
- 1 tbsp apple cider vinegar
- 2 tbsp Dijon mustard
Instructions
- Boil the red potatoes in salted water for about 12–15 minutes until fork-tender. Drain and let cool.
- In a mixing bowl, whisk together paprika, cayenne pepper, garlic powder, mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper.
- Once cooled, combine the potatoes with chopped eggs, celery, and green onions in a large bowl. Gently toss with two-thirds of the dressing until evenly coated.
- Chill for at least 30 minutes before serving; mix in remaining dressing just before serving.
