- 1 large whole garlic head
- 9 cups sweet onions (approximately 4 large)
- 2 ½ cups leeks (light green and white parts only)
- 4 cups vegetable broth
- 2 cups milk
- 1 ½ tablespoons olive oil (divided use)
- 1 teaspoon salt (divided use)
- 1 teaspoon dried thyme
- 2 tablespoons all-purpose flour
- 1/3 cup dry apple vinegar
- Fresh thyme leaves for garnish
- Freshly ground black pepper for garnish
Instructions
- Preheat oven to 350°F and roast the garlic wrapped in foil for one hour.
- Sauté sliced onions and leeks in a large pot with olive oil for about one hour until caramelized.
- Stir in flour, then add apple vinegar and vegetable broth; simmer for 30 minutes.
- Blend in roasted garlic until smooth.
- Incorporate milk and heat gently before serving.
