  • 6 oz cream cheese (room temperature)
  • 3 TBSP white granulated sugar
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup brown sugar (packed)
  • 1/2 cup white granulated sugar
  • 1 cup finely grated carrots
  • 2 large egg yolks (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix cream cheese, sugar, and vanilla until smooth for the filling.
  3. In another bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, whisk melted butter with brown and white sugars. Add carrots and egg yolks; mix well.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Scoop dough onto parchment-lined baking sheets; flatten slightly.
  7. Place about 1 tsp of cream cheese filling in the center of half the dough portions. Top with remaining dough and seal edges tightly.
  8. Bake for about 15 minutes or until lightly golden around the edges.
  9. Cool on sheets for five minutes before transferring to racks.
