Ingredients
- 6 oz cream cheese (room temperature)
- 3 TBSP white granulated sugar
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup unsalted butter (melted and cooled)
- 1 cup brown sugar (packed)
- 1/2 cup white granulated sugar
- 1 cup finely grated carrots
- 2 large egg yolks (room temperature)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix cream cheese, sugar, and vanilla until smooth for the filling.
- In another bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, whisk melted butter with brown and white sugars. Add carrots and egg yolks; mix well.
- Gradually add dry ingredients to wet ingredients until just combined.
- Scoop dough onto parchment-lined baking sheets; flatten slightly.
- Place about 1 tsp of cream cheese filling in the center of half the dough portions. Top with remaining dough and seal edges tightly.
- Bake for about 15 minutes or until lightly golden around the edges.
- Cool on sheets for five minutes before transferring to racks.
