- 1½ cups all-purpose flour

- 2 large eggs
- ½ cup brown sugar
- 1 cup finely grated carrots
- 1 cup chopped pitted dates
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- In a large bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
- Gradually incorporate the dry mixture alternating with coconut milk until just combined.
- Fold in grated carrots and chopped dates until evenly distributed.
- Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick comes out clean.
- Cool before glazing if desired.
