  • 3 scallions, thinly sliced
  • 1/3 cup fresh mint leaves, chopped
  • 1/2 cup slivered almonds

Instructions

  1. Make the dressing by mincing garlic and creating a paste. Combine with yogurt, lemon juice, olive oil, salt, and pepper in a medium bowl; whisk until smooth.
  2. Toast slivered almonds in a dry skillet over medium heat for about 2-4 minutes until golden brown; set aside to cool.
  3. In the bowl with the dressing, add celery slices, scallions, and chopped mint; mix well.
  4. Add toasted almonds (reserve some for garnish) and stir gently to combine.
  5. Garnish with remaining almonds and mint before serving.
