Ingredients
- 3 large garlic cloves
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1 bunch celery (10 to 12 stalks), thinly sliced
- 3 scallions, thinly sliced
- 1/3 cup fresh mint leaves, chopped
- 1/2 cup slivered almonds
Instructions
- Make the dressing by mincing garlic and creating a paste. Combine with yogurt, lemon juice, olive oil, salt, and pepper in a medium bowl; whisk until smooth.
- Toast slivered almonds in a dry skillet over medium heat for about 2-4 minutes until golden brown; set aside to cool.
- In the bowl with the dressing, add celery slices, scallions, and chopped mint; mix well.
- Add toasted almonds (reserve some for garnish) and stir gently to combine.
- Garnish with remaining almonds and mint before serving.
