- 2 lbs large, firm fresh strawberries
- 8 oz softened cream cheese
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup heavy cream, whipped to stiff peaks
- ½ cup graham cracker crumbs
- 2 tbsp melted butter
- 1 tbsp brown sugar
Instructions
- Wash and hull the strawberries, then slice them in half lengthwise.
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream until light and fluffy.
- Scoop out a small portion from the center of each strawberry half to create space for filling.
- Transfer the cheesecake filling into a piping bag and fill each strawberry generously.
- In a separate bowl, combine graham cracker crumbs, melted butter, and brown sugar until mixed well; sprinkle over the filled strawberries.
- Chill in the refrigerator for at least 30 minutes before serving.
