- 3 tbsp soy sauce
- 1 cup chicken broth (divided)
- 2 tsp sugar
- 2 tsp cornstarch (divided)
- 2 cloves garlic (finely chopped)
- 2 tsp ginger (finely chopped)
- 2 cups broccoli florets
- 1 lb boneless chicken breast (cut into 1-inch pieces)
- Cooking spray
Instructions
- In a small bowl, whisk together soy sauce, 3/4 cup chicken broth, sugar, and 2 teaspoons cornstarch until smooth. Set aside.
- Heat a nonstick skillet or wok over medium-high heat and lightly spray with cooking spray. Add chicken along with garlic and ginger; stir-fry for about 2-3 minutes until browned.
- Pour the sauce over the chicken, stirring to coat evenly. Cover and simmer on low for 5 minutes.
- Add broccoli to the skillet, coating it in the sauce. Cover and cook for an additional 5 minutes until tender-crisp.
- Mix remaining chicken broth with cornstarch to create a slurry, then stir into the skillet until the sauce thickens (1-2 minutes).
- Serve hot over steamed rice or noodles.
