  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken ham
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound each chicken breast to about ¼ inch thickness.
  3. Layer each breast with a slice of chicken ham and a slice of Swiss cheese; roll tightly and secure with toothpicks.
  4. Dredge each roll in flour seasoned with salt and pepper, dip into beaten eggs, then coat with breadcrumbs.
  5. Heat olive oil and butter in a skillet over medium heat; sear each roll for about 2-3 minutes on each side until golden brown.
  6. Transfer rolls to a baking dish and bake uncovered for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  7. For the sauce, melt butter in a saucepan over medium heat, whisk in flour, gradually add milk, stir in Dijon mustard and Parmesan; simmer until thickened.
  8. Remove toothpicks from rolls before serving; slice into rounds and drizzle with the creamy sauce.
