- 3 lb boneless, skinless chicken thighs
- 3/4 cup plain yogurt
- 1 tablespoon white vinegar
- 5 cloves garlic (minced)
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 2 teaspoons cardamom powder
- 1 tablespoon chili powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 2 teaspoons sea salt
- 2 teaspoons black pepper
Instructions
- Place the chicken thighs on a cutting board and optionally pound them with a meat tenderizer for extra tenderness.
- In a large bowl or zip bag, combine chicken thighs with yogurt, minced garlic, spices, vinegar, lemon juice, olive oil, sea salt, and black pepper. Mix thoroughly to coat the chicken.
- Refrigerate for at least 3 hours or overnight for best flavor absorption.
- Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken for about 8-10 minutes per side until cooked through (internal temperature reaches 165°F).
- Let the chicken rest before slicing into strips.
