Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup cooked rice (white or brown)
- 1 cup black beans (drained and rinsed)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup chipotle ranch dressing
Instructions
- In a bowl, mix olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Marinate chicken for at least 15 minutes.
- Grill marinated chicken on medium-high heat for about 6–7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
- Prepare fillings: Cook rice if needed; drain beans; chop veggies.
- Warm tortillas. Assemble by layering rice, beans, chicken slices, cheese, veggies, and dressing.
- Roll tightly and serve with extra dressing.
