  • 2 tablespoons lime juice
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup chipotle ranch dressing

Instructions

  1. In a bowl, mix olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Marinate chicken for at least 15 minutes.
  2. Grill marinated chicken on medium-high heat for about 6–7 minutes per side until cooked through (165°F internal temperature). Let rest before slicing.
  3. Prepare fillings: Cook rice if needed; drain beans; chop veggies.
  4. Warm tortillas. Assemble by layering rice, beans, chicken slices, cheese, veggies, and dressing.
  5. Roll tightly and serve with extra dressing.
