Ingredients
- 1 cup Greek yogurt (any flavor)
- 1 cup strawberries (diced)
- 48 pretzels
- 2 cups dark chocolate chips
- 1 tablespoon coconut oil (for melting chocolate)
- ¼ cup crushed peanuts (for topping, optional)
Instructions
- In a mixing bowl, combine Greek yogurt and diced strawberries until well mixed.
- On a parchment-lined baking tray, place 28 pretzels and top each with about 1 tablespoon of the yogurt-strawberry mixture.
- Create pretzel sandwiches by placing another pretzel on top of each filled one.
- Freeze the sandwiches for at least 2 hours until solid.
- In a microwave-safe bowl, melt dark chocolate chips with coconut oil in 30-second intervals until smooth.
- Dip each frozen pretzel sandwich into the melted chocolate and sprinkle with crushed peanuts if desired.
- Return to the freezer until the chocolate is fully set.
